Healthier Christmas Eggnog Bread

We all have treasured recipes that are just steeped into the crevices of our senses.  Whether it’s the cookies, gravy, or cocktails, you’re probably salivating at the thought of the feasts that come with the cooler temperatures in Canada.

This Eggnog Bread is soft, springy, and subtly spiced making it the perfect alternative for French Toast and simply irresistible on it’s own fresh from the oven.  It’s super simple so the kids can help you make it and it’s got a higher protein content to help keep you satiated, too.

CHRISTMAS  EGGNOG  BREAD

INGREDIENTS
– 2 cups Gluten-free 1 for 1 flour or look to my Gluten-free, life changing biscuits for our fav GF flour recipe 
– 1 cup unsweetened almond milk 
– 1/2 cup coconut sugar 
– 1/4 cup Greek yogurt 
– 1/4 cup eggnog 
– 2 large eggs 
– 1 teaspoon pure vanilla extract or 2 drops pure doTERRA Madagascar Vanilla essential oil 
– 1 teaspoon baking powder 
– 1/2 teaspoon baking soda 
– 1/2 teaspoon nutmeg (get the actual nut and freshly grind or grate it … this will BLOW your mind!)
– 1/2 teaspoon cinnamon or 1 drop of pure doTERRA cinnamon bark essential oil
– A pinch of salt 🧂


INSTRUCTIONS

1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
2. In a large bowl, combine the flour, baking powder, baking soda, nutmeg, cinnamon, and salt. Mix well.
3. In another bowl, whisk together the almond milk, coconut sugar, Greek yogurt, eggnog, eggs, and vanilla extract until smooth.
4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
5. Pour the batter into the prepared loaf pan and smooth the top.
6. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
7. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

8. When cooled, you can dust it lightly with some powdered sugar and some more freshly ground nutmeg (so I LOVE nutmeg, right?)
